R&D team supports franchise owners
“The corporate chef comes up with some great ideas, but we also hear a lot from the team of TacoTime Mexican food franchise owners,” says Kevin Gingrich, TacoTime President. “We get those ideas together and have what’s really a couple of days of serious binging in the test kitchen. We may try 30 different products out to see if any of them have the potential of making it onto the menu.”
The key at this stage is to see if the concept can be made quickly and effectively in the TacoTime franchise food prep area, and also to make sure that its ingredients can be easily sourced to maintain quality.
“If the brand can’t make it the best every time, we’re not going to pursue it,” Kevin explains. “Something may be a really neat taste combination, but if it’s too complicated to pull together, or if the ingredients are hard to get year-round, then it may not work for us — or it might work, but only as a seasonal special menu item.”
New food items benefit from added input
Once the testing is over, the team agrees on four products that will be tested in select TacoTime locations. As that is happening, every other TacoTime Mexican food franchise owner will be updated on how all that is going, so that everyone’s in the loop.
“By the time we all meet back up a few months later, we’ve gotten a lot of feedback from consumers who are purchasing the items, but also from the franchise owners on how they were to prepare and deliver. Then TacoTime will take the best ones and present them to the co-op, so that every franchise owner can weigh in and offer an opinion. Nothing is done by chance, so when the brand creates something new, it builds on the very thing that has always set TacoTime® apart: great, high quality ingredients combined to create delicious Mexican food.”
